Hello! Fresh! (Part 2)

(Part 2)


Well as you know we have been on a new adventure with meal deliveries! And.... I got to experience the customer service side of Hello Fresh after our second week's box didn't show up for a week. (In fact it got lost) Yay!

So after waiting a week for the box to arrive and having no luck with the delivery company, I called Hello Fresh pretty upset. I called twice. Once on Monday worried I hadn't seen any updates on the shipping information, which they then gave me a $10 dollar credit to my account, and then encouraged me to called back the next day if the box did not show up by 9p. It obviously did not so I called again. The customer service rep. was very kind and gave me an additional $10 credit to my account and then refunded the money we had spend to my account as well. At first I was thrilled, but then I learned I would have to re-order the box, which sucked because the meals we picked out, were not available for the next order... 😟

We put a lot of time into deciding what we want to eat each week so this was a major bummer. The good news is we "basically" got our money back, plus $20 but we can only spend it with Hello Fresh AND just an FYI, you are locked into a four week plan (if you use a promocode) before you can use "credits" So IF we want to spend the money we HAVE to finish the promocode discounted four week plan first... 😡 (That bothers me)...

SO I guess I get to do a five week review for you rather then just the two weeks... Your welcome.

With that all said and done with, lets begin with this weeks meal list!

#1 Pork Chops with Zesty Green Onion Salsa

With great confidence I can say that this meal was SO FREAKING YUMMY! Oh my gosh if there is anything to brag about with Hello Fresh, its their recipes! They are amazing! The pork chop seemed small, but we I guess are use to having a large protein portion in our meals. That really didn't matter though because the rice and beans ratio was more then enough. 
I do believe we could absolutely make this meal with our own ingrediencies for much less then they priced it at, but I am learning more and more, that hello fresh's prices are really more about convenience then the actual cost of the food. We didn't make any substitutions or changes to the recipe because we simply didn't need to! (SCORE!) 
One con I can give confidently is how confusing the instructions seem to get. Its not the end of the world, but Quinn and I find ourselves needing to say the instructions out 
loud to each other a few times for us to actually get what they are saying.

#2 Salsa Verde Enchiladas



Enchiladas are always a win to me, so when I saw this as an option I absolutely jumped on it even though it was a vegetarian meal. Now with this particular meal we got it knowing we would be adding chicken. As much as I admire vegetarian meals I am counting macros which calls for an insane amount of protein, so chicken was the perfect additive! We actually got a $5 roasted chicken from Costco. We usually do this once a month anyways to obviously eat the chicken, but then Quinn makes a delicious chicken broth with the rest to can! So it kind of workout. I'm sure the recipe would have been delicious without the chicken, but I cannot stress enough how "extra" we are!

ANYWHO, lets move onto the actual recipe!

The recipe calls for black beans, red pepper, chili pepper, tomatoes, garlic, green onions, Salsa Verde, lime, sour cream, and obviously the cheese and tortillas.
I have to say I am so surprised by all the packaging each week! The black beans and the Salsa Verde came in these adorable little boxes! It reminded me of school lunch box milk. It was cool because all the packaging is recyclable! 
The food all worked well together and this was a more easy recipe to follow then some of the others we have tried, but the flavors!! I cannot praise the recipe creators enough on how yummy each recipe has been. Out of two weeks of three meals per week, we've only really had two recipes we were not a huge fan of! However if we are talking remaking this recipe, which we plan to at least try, we will have to probably try a few different kinds of Salsa Verde's or make it ourselves to get a similar flavor. (which can be hard, because I swear they are all completely different). I can you one thing I will definitely be using green onions WAY more often now that I am use to using them!


#3 Pork Sausage Rigatoni in a Creamy Sauce



You guys!!! Okay I know I have said many times "This recipe is amazing" and if I haven't I pretty much should have because, well you know by now.... But THIS RECIPE!!!! I can't! I do feel bad because every recipe this week called for me to cut up a tomato and every time I did Quinn would gag... (He hates tomato chunks) and would beg me to cut them up smaller.... It was rough. But the taste of this meal! 

If you are are lactose intolerant (Like I am) then this meal will be a rough one for your tummy, but I just took my "Cheese pills" and was just fine. It calls for red pepper, tomatoes, green onions, pork sausage, rigatoni noodles parmesan cheese, cream cheese, and lemon. When we did a bit more noodles, but we really didn't need to, the recipe would have made plenty of food without, Quinn just wanted a but more. (extra 😆) 

When we completed the recipe I realized we didn't use the lemon and I panicked because I have been trying so hard to make the recipe how it is suppose to be made so I get the "whole experience" but then I read the instructions a bit closer and the lemon is reserved to squeeze on top. BOY was that a game changer! 

The meal was so savory on its own I was happy with it, but the second I used the lemon, it was like flavors were dancing around in my mouth! I hadn't realized how perfect small cross overs can create such a fun explosion of flavor in your mouth! I thought I had gotten much better at cooking, turns out I still have a lot to learn but these meals have made my already creative and explorative side go nuts!

This recipe can easily be made on your own and most likely for much cheaper then the $6.99 a meal that we paid. And we definitely plan to try it out!


Well that's all I have for this week. Again I can't reiterate enough how much I AM NOT an influencer or a blogger, so if this seems all over the place and confusing to follow, its mostly because I have NO IDEA what I am doing! Just trying to be honest and share my thoughts.
